Rice is the world's second-most consumed cereal grain after wheat. Due to their high demand for water and temperature, plants are native to South Asia (Oryza sativa, Poaceae) and southeastern Africa (O. glaberrima). Paddy rice refers to the cultivation in fields flooded with water, either rainfed or irrigated. Major groups of rice include the long-grain, non-sticky indica rice (O. sativa var indica) and the short-grain, sticky japonica (O. sativa var japonica). Most important varieties include Thailand's Hom Mali and India's Basmati.
