Resembling tiny, tightly closed cabbage heads, Brussels sprouts are members of the cabbage family, and were first widely cultivated in 16th-century Belgium. They grow in closely packed rows on a tall, thick stalk, and have a pungent, slightly bitter flavor.
Brussels sprouts are the compact vegetative buds that develop along the stem of the Brussels sprouts plant. They should be harvested when the buds are firm, but not overmature which is indicated by splitting of the outer leaves.

Preheat oven to 400°F. Drain and trim the stem ends of the Brussels sprouts, pulling off any yellow outer leaves. Cut each sprout in half from stem to top. Toss sprout slices in a bowl with the olive oil, salt and pepper.
