This plant is commonly found in swampy areas or in low-lying saturated soils adjacent to streams. Although cabbagelike in appearance when the fruit ripens in the autumn, skunk cabbage has no close relationship to the cabbage family. Large (up to 1 m long), broad (0.3 m wide), lance-shaped, smooth dark green leaves on short stems from basal rosette.

Cut head of cabbage into quarters, remove stalk. Chop lengthwise into small pieces. Note: chopping cabbage can be a highly effective stress reliever. Coat bottom of pot with oil/butter. Turn heat to high setting.

Combine all ingredients in medium sauce pan. Heat covered on medium heat until cabbage sinks into liquid and liquid bubbles. Stir, cover, and simmer on low until cabbage is tender, about an hour.
