Cauliflower NUTRITION: HOW TO SELECT: Cauliflower is a good source of Vitamin C and potassium. Select white or creamy -white, very fresh heads which are firm and compact. This is the preferred method to preserve cauliflower. Wash and trim. Split heads into pieces 1 inch across.
