CAULIFLOWER Cauliflower is, indeed, a flower, one growing from a plant that in its early stages resembles broccoli, its closest relative. Like broccoli, cauliflower is a cruciferous vegetable; members of this family have been associated with reducing the risk of cancer.
The level of homology suggests that comparison of these two species could reveal func- tional cis-regulatory elements. There is growing interest in comparing genome sequences to identify regulatory regions (Stojanovic et al., 1999).
Cauliflower NUTRITION: HOW TO SELECT: Cauliflower is a good source of Vitamin C and potassium. Select white or creamy -white, very fresh heads which are firm and compact. This is the preferred method to preserve cauliflower. Wash and trim. Split heads into pieces 1 inch across.
