AN ECONOMIC ASSESSMENT OF CAULIFLOWER Executive Summary The U.S. produced an average 7.4 million cwt of cauliflower annually between 1988 and 1993. Eighty-six percent of that total was destined for fresh-market use. The remainder was processed, primarily as frozen product.
Cauliflower (Brassica oleracea) and other cruciferous crops including cabbage, brussels sprouts and broccoli are susceptible to many diseases. Alternaria leaf spot and downy mildew are common in crucifer production and can reduce plant yield and market value.
This member of the cabbage family takes its name from the Latin words caulis, meaning stalk, and floris, meaning flower. As the head forms, the cauliflower crown is shaded from the sun in order to protect its milky white color; this prevents chlorophyll from developing and turning it green.
-Planting: This vegetable grows best during periods of cool temperatures, and you'll have better luck in most areas if it is planted during midsummer for early fall ripening. Start the seeds indoors or in their own special planting bed outdoors 6-8 weeks before planting time.
