Since avocados (Persea americana, Lauraceae) do not tolerate frost, they can commercially be grown only in warm subtropical or tropical climates. The climacteric fruits mature when exposed to ethylene during postharvest and contain a high percentage of monounsaturated fat plus the fatty alcohol avocadene.
