Cultivated throughout the tropics, bananas (Musa, Musaceae) are among the most widely consumed foods in the world. The commercial dessert cultivars including 'Cavendish' are largely produced for export whereas the starchier plantains are consumed as a staple in many countries. Export bananas are picked and shipped green, and then ripened with ethylene gas in ripening rooms in their country of destination.
