Asparagus (Asparagus officinalis, Liliaceae) are of two types, based on the color of the spears. The first (temperate) "white asparagus" produces white spears which are harvested belowground and the second (sub-/tropical) "green asparagus" produces dark green sprouts which are harvested aboveground.
