Among the cole crops, cabbage (Brassica oleracea convar. capitata, Brassicaceae) refers to the head-forming type of brassicas. The typical "cabbage head" consists of a compact spherical cluster of immature leaves, surrounded by partially unfolded outer leaves. The many varieties of the leafy vegetable are separated by shape, time of maturity and color.
