Celery (Apium graveolens, Apiaceae) comprises three types of vegetables seperated by their growth and use. Leaf celery (var. secalinum) produces leaves, stalk celery (var. dulce) produces crisp, fleshy and upright stems, and celeriac (var. rapaceum) is used for the fleshy taproot.
