Storage can be done in several ways. Late celery may be stored in the garden for 1 to 2 months by building up soil at the base of the plant. Gradually build up the bank of soil to the top of the plant. This should be done before winter sets in.

Germination tests were done with five varieties of celery on thermo-gradient bars set to cover the range 0 to 40°C. Optimum germination at constant temperatures occurred between 10 and 15°C in all five varieties, with maxima between 20 and 30°C.

Celery mosaic virus (CeMV) is a virus disease of celery. CeMV was first identified in South Australia in the 1980's but has now spread throughout all Australian celery growing districts. Symptoms Infected plants have a mosaic pattern on the leaves (Figures 1, 2 & 3) and are stunted.

Melt butter and gently saute celery until it begins to soften. Stir in the flour, and then gradually stir in the milk and stock. Cook until celery is tender, stirring occasionally. Gradually add the stilton and stir until blended. Season to taste (you won't need much salt, since stilton is salty).
